Slow Cooker Corn Chowder with Bacon



Indulge in the creamy comfort of this slow cooker corn chowder infused with the smoky goodness of bacon. It's a hearty and satisfying dish perfect for any chilly day!

Ingredients:

  • 4 cups frozen corn kernels
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup diced potatoes
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced cooked bacon
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 cups half-and-half
  • 2 tablespoons cornstarch

Instructions:

Corn, onion, garlic, chicken broth, potatoes, carrots, celery, bacon, thyme, parsley, salt, and pepper should all be put in a slow cooker

Put the lid on top and cook on low for 6 to 8 hours or high for 3 to 4 hours

Half-and-half and cornstarch should be mixed together in a small bowl until the mixture is smooth

Add to the slow cooker in a stir

Put the lid on top and cook on high for another 30 minutes, or until the sauce gets thicker

Serve hot, and if you want, top with extra bacon
