This Keto Cranberry Vinaigrette is a slightly sweet and sour dressing that is great for drizzling on salads while keeping your carb count low. It tastes great and is full of healthy antioxidants from the fresh cranberries. The keto-friendly sweetener keeps the carb count low.
Ingredients:
- 1/2 cup fresh cranberries
- 1/4 cup apple cider vinegar
- 2 tablespoons olive oil
- 1 tablespoon keto-friendly sweetener such as erythritol or stevia
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions:
Cranberries and apple cider vinegar should be mixed together in a small saucepan
It will take about 5 minutes of cooking at a low boil over medium-low heat until the cranberries pop
