Summer Squash Noodles with Basil Lime Dressing



This summer squash noodle salad is a light and refreshing dish that's perfect for a hot summer day. The basil lime dressing adds a zesty kick, while the optional Parmesan cheese and pine nuts provide extra depth of flavor. It's a healthy and delicious way to enjoy the season's bounty of squash.

Ingredients:

  • 4 medium-sized summer squash
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese optional
  • 1/4 cup pine nuts optional

Instructions:

Using a spiralizer, make strands of summer squash that look like noodles and put them in a big salad bowl

Put the minced garlic, lime juice, olive oil, chopped basil, salt, and pepper in a small bowl and mix them together with a whisk

Cover the summer squash noodles with the dressing

Toss them to make sure they are well covered

Allow the salad to sit for ten minutes so that the flavors can mix

You can add grated Parmesan cheese and pine nuts to the top if you want to make it taste and feel better
